Lipase - Catalyzed Interesterification of Tripalmitin and Capric Acid in Non - Aqueous System

Abstract
To develop novel lipids, lipase-catalyzed interesterification of tripalmitin and capric acid was studied using lipases in organic solvents. It was shown that higher amounts of interesterified products were produced by Lipozyme IM 20 (Rhizomucor miehei), followed by Candida cylindracea and pancreatic lipase, Four kinds of lipases, namely, Lipase OF-360 (Candida rogusa), Lipase AP (Aspergillus niger), Lipase CV (Chromobacterium viscosum) and lipase from Rhizopus delemar were unsuitable for the reaction because of poor conversion of the substrate to the expected products, although these lipases are more active in the synthesis of triglyceride and some aliphatic ester. The interesterification pattern was also compared to triglyceride synthesis.
